Crockpot Thai Peanut Chicken

I came across this recipe when I was looking for clean eating recipes I could make in the crockpot.  I made it last night and it was so tasty!  It was so easy and we gobbled it up!  I made a couple tiny tweaks to the recipe to fit our tastebuds a little...




Ingredients
One package boneless, skinless chicken breasts
1/2 white onion, diced
1/2 cup creamy, natural peanut butter
3/4 cup organic chicken broth
1 lime, juiced
1/2 cup soy sauce (we used gluten free)
1 tsp cumin
Chopped scallions
Crushed peanuts


Directions
- Place chicken breasts in crockpot (mine were frozen) and onion
- In a bowl combine, peanut butter, chicken broth, lime juice, soy sauce, and cumin.  Pour over chicken.  
- Cover and cook on low 7-8 hours.
- Top with crushed peanuts and diced scallions.

I served ours on brown rice.  My kids actually ate a tiny bit which I will take as a win!

Shopaholic

It's shopping time again lovelies!  My wish list is getting longer and longer I swear!

Ever since Allie posted about this grill I haven't been able to get it out of my head.  This is so diet-friendly and would be so useful since I am not exactly a pro on the outdoor grill.  It's on sale right now, too!

I am thinking these may be this year's pair of JR's.  Cork makes me happy!

Not that I have anywhere to wear this dress, but I love the structural lines (and reasonable price) of it.  The color is also so flattering and would look amazing with black or nude heels.

I am constantly hunting for easy dresses and this just fits the bill.  Nude is also become my favorite color to wear aka win-win.

This looks so similar to the Merino tunic (which I love) and would be so great as a transitional piece worn with pants or shorts.

It has an anchor? Call me sold!

I am all about mint right now and this would match so much!

This fit and flare looks so much more pricey than it is and could be dressed up or down!  This just means I need to go on a F21 run ASAP!

I picked these up for Greyson and he actually got to wear them this weekend!  I love madras and a good sale!

I also picked this up for Avery (I wish it came in my size!) and she has been wearing it nonstop.  It is so girly, but durable and matches everything - all necessities when your child likes to change her clothes ten plus times a day.

Happy Monday everyone!  The weather this weekend was beyond perfect! It was such a great opportunity to bust out shorts, dresses, and sandals - and play outside all day!  I wish I could bottle this weather and keep it all year long.  I got these shorts a couple of years ago (they're still sold) and love them.  I bought them to fit snug with looser tops, like this little gem that came in my latest StitchFix. They are super comfortable and versatile. There is so much pink and plaid - makes my heart so happy!  All I need to do it add to my Jack Rogers collection (I try to annually) and I am good to go!

Sandalfest 2k14

I love sandals. LOVE, love, love.  They are ten thousand times more comfortable than heels, boots, sneakers, etc. IMHO.  I think they are the most flattering kind of shoe (besides a nude pump, duh) and I wish I could wear them year round (miss you California!)  Now that Spring is actually here, it's time to restock for the warm weather!  Happy feet!

Windy Weather Staples

There is no single item of clothing that I have consistently loved longer than a good puffy vest.  I got my first puffer in high school and have rotated through many over the years since.  They are the perfect outerwear for these crazy windy Spring days.  Throw in a good plaid shirt (JCrew makes the best) and some sparkly shoes and I'm out the door!  Sparkles and plaid make everything better, right?  This is totally one of my momiforms, but I have been rocking it since the college days.  You can't go wrong with a classic!

Shopaholic


I am always on the hunt for cute tablecloths, place mats and cloth napkins.  I never thought to check C.Wonder before but I now need to make a trip there to stock up.  How fun is this chevron gold placemat for making meals more fun?

Speaking of C.Wonder, my friend had this cute on and I cannot stop thinking about it.  It is the perfect Spring coat!

I want a tutu skirt in the worst way but have nowhere to wear one.  Clearly, this is an item I should just go ahead and purchase and prance around my house in, right? Right?

What can I say, I never met a pair of patterned shorts I didn't like!

I mean... this pattern, the tummy-hiding, breezy, flowiness of this dress is just perfection! And so is the always low Forever 21 price!  Pregnant friends, this would be great for those bumps!

This makes my nautical-loving heart go pitter patter!  I'm thinking it would be great in the kids' bathroom! Navy and white against pale blue is one of my favorite (masculine) color combos.

This dress! Ahhh! I am swooning over ti! It isunder $100 and could be dressed up or down depending on your shoes and accessories.  Drop waists are so fun and girly!

I love a good strappy brown sandal.  This would match everything and looks like it would mold to the foot and be super comfy after a couple of wears.


I saw this in the store the other day and I can't get her out of my head.  I'm worried she might be the one I let get away.  This shade would complement any other color... it is perfection! NEED it!

Black and Blue

Sunday blues? And blacks?  With a side of stink face aka the real Sunday blues.  I hate to see the weekend go, but I love the clean slate a Monday brings (I'm a weirdo.)  I may have been on a bit of a shopping bender lately, trying to spruce up my wardrobe for Spring with some great sales.  My last StitchFix was so good I had a hard time not keeping everything.  These Kensie pants, which are a deliciously pale blue, were super comfy and versatile so they were clearly a no brainer.  Despite Avery's tank top below, I needed to layer my shirts to stay warm enough - it definitely isn't shorts weather yet!   I'm also guest posting over at Katie Elizabeth today so make sure you check it out!
