I have a new obsession with massaged kale salads. I kept seeing them on Instagram and when Day Old News posted a picture of one I started pinning and googling and them massaging my greens. It is such a great way to add flavor and make a faux creamy dressing without all the additives and calories. This is a recipe I came up with after reading a few and playing around with them. It is so easy and filling!
Kale, stems removed; leaves only chopped
1 tsp olive oil
Juice of one lemon
Salt and pepper to taste
1/2 tsp garlic powder
Handful panko bread crumbs
Thinly sliced purple onion
- Place kale leaves in a large bowl and rub together until leaves start to feel soft.
- Add in olive oil, salt, pepper, garlic powder, avocado and lemon juice
- Massage all ingredients with kale until avocado is creamy and kale is evenly covered in dressing.
- Toss in bread crumbs, mushrooms and onions.
- Eat and enjoy!
